Sausage and Bean Casserole

I lovemaking sausage casseroles in winter, especially as you can put everything into the slow cooker and forget about it for the rest of the day. This morning I’d gone out shopping but wanted to get on with a few jobs when I got home. I wouldn’t be without my slow cooker. I thought something like Sausage Casserole would be delicious, easy to prepare as well as being filling. My family all love sausages and I had some Masham Pork Sausages which were near their use by date. To the sausages I added chopped onion, garlic, red pepper, tinned chopped tomatoes and a can of cannelini beans.

I used the recipe from Eat Well For Less for the basis of the meal but also used a JD Seasonings Sausage Casserole spice blend pot to add the flavouring. I also added a tablespoonful of Worcestershire Sauce into the Casserole.

I had planned to make jacket potatoes to go with the casserole but hubby asked if we could have mash instead with it. I’d also got some broccoli to go with it but I didn’t get round to cooking it.

Never mind! Double greens and extra veg tomorrow chez SmartCookieSam!

Hope you’re enjoying your weekend.

Love Sam xx
